Regarding this week’s selected substance:

The spicy fragrance of cloves comes largely from eugenol, the principle ingredient in oil of cloves. Eugenol is used not only in perfumes and mouthwashes, but also as an insect attractant and a dental analgesic. It can be oxidized to form vanillin, which has a vanilla scent.
